Sugar Cookies and Fancy Icing...

Sugar Cookies
1 1/2 Cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 Cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

1.  In a large bowl, or kitchen aid, cream together butter and sugar until smooth.  Beat in eggs and vanilla.  Stir in flour, baking powder, and salt.  Cover, and chill dough for at least 1 hour (or overnight)

2.  Preheat oven to 400 degrees F.  Roll out dough on floured surface 1/2 thick (the cookies don't raise or change much, so make the dough how you want the cookies! I like them thick)  Cut into shapes with cookie cutters.  Place on cookie sheet 1 inch apart.

3.  Bake 6-8 minutes.  cook completely before frosting. I like to undercook slightly to make sure they don't EVER get hard!  I HATE hard sugar cookies!


2 Cups confectioners sugar (powdered sugar)
4 teaspoons milk
4 teaspoon light corn syrup
1/2 teaspoon almond extract (or to taste)
food coloring (USE THE GEL KIND!! have you discovered them yet??)

In small bowl, or kitchen aid, stir together confectioners sugar and milk until smooth.  Beat in corn syrup and almond extract until icing is smooth and glossy.  If icing is too thick, add more corn syrup.

Divide into separate bowls, and add food coloring.  Dip cookies, or paint with a paint brush!!

Really fun for the kids to do with the brush.  But a butter knife works too!
