Dill & Avocado Burger & Veggie Fries

Yummy summer dish! This was one of our P90X favorites (not an official P90X recipe, just good and balanced)


Ingredients:
Burgers
1lb ground beef 
1 egg
2 TBSP Worchestishire Sauce
Salt and Pepper
Grill seasoning
Whole Wheat Buns (only one half per burger if doing open face)

toppings
sweet n' spicey mustard (or add brown sugar or honey to dijon)
fresh dill
Fresh limes
fresh cilantro
avocados
Red Onions

Veggie Fries
Carrots
Asparagus
Olive Oil
Grill Seasoning

Directions:
Preheat Oven to 375F for veggie fries while making burgers
cut carrots and half the asparagus (large 'french fry' size)
place in baking dish
drizzle with olive oil, sprinkle with grill seasoning
gently mix to disperse
Cook for about 15 minutes or until tender

while veggie fries are are baking....
heat up frying pan on med-high heat
mix up the beef, egg, worchestishire sauce and S and P
Make 4 large patties and place on frying pan (or GRILL!) and cook as you like it

Layer up the Burger:
bun
burger
sweet n' spicey mustard
fresh dill
lime juice
avocados
red onion
cilantro!
and a little more lime
 Don't top it with the top bun... I dare you.  Totally doesn't need it!  Eat it open face with a fork.  To die for!

Green Taco Soup

I like to have soup night, despite my husband's grumbling, and we have taco soup a lot.  We're sick of it quite frankly.  This was like the best soup I've had in a LONG time!  And if you're thinking of skipping the pico de gallo... it's sooo good on it.  I did store bought pico, which isn't good on ANYTHING, but it's GOOD in this soup! 


Ingredients:
4 Cups Chicken Stock
1/2 bottle salsa verde
1 can black beans
1 can cannelli beans (or pinto)
1 C corn (canned or frozen)
1 onion
2 cloves finely chopped garlic
1 carrot, finely chopped
2 chicken breast (cooked and cubed, or shredded, or rotiserie)

top with cheese, sour cream, chips, cilantro and pico de gallo

Directions
saute onions, carrots and garlic in Olive oil until almost soft
add chicken stock and salsa
dump in drained black beans, drained cannelli beans, drained corn, and chicken

bring to a boil, then reduce heat and simmer for 15 minutes.  

Top with yumminess and it is the BEST mix up to taco soup you've ever had!!  YUM!
