Chicken Stir Fry with Peanut Sauce...

Ingredients:
1TBSP Olive Oil
3 cloves garlic, finely sliced
1 bag of fresh stir fry veggies (my bag had snow peas, broccoli and carrots)
1/2 small head of cabbage, finely sliced
colorful peppers (I used those little mini peppers that are all sorts of colors. YUM)
1/2 C water
2 Chicken Breasts (prepared as you like)
Thai Peanut Sauce 1/2 bottle (I seriously just bought a bottle)

Green Onions, chopped

Directions:
Prepare chicken as you like (crock pot chicken, chopped. or saute some sliced chicken breast.)
Warm Olive Oil on Med heat and saute the garlic
Add all the cut-up veggies, salt and pepper it, turn up the heat.
When it's really hot, add the water and put a top on it. (This kind of quick steams them so they get really bright and crunchy, and not soggy)
Add Chicken and Sauce (I used 1/2 bottle)
continue to cook to your liking (again, I like it a little crunchy and VERY colorful, so it shouldn't be long)
top with green onions before serving.

optional:  put over rice.  But we're cutting our carbs and it totally doesn't need it!
Wrap leftovers in a tortilla for a Thai Peanut Chicken Wrap... OH there's some carbs.
