Makes 8 pieces of yummy naan bread. Perfect for curry night! And SO SO good for days! I would recommend doubling the recipe if you have time. It's worth it. And you will eat it all.

2tsp dry active yeast
1tsp sugar
1/2 cup water
2.5-3 cup flour
1/2tsp salt
1/4 cup vegetable oil
1/3 cup plain greek yogurt
1 large egg

In small bowl, combine yeast, sugar, and water. Let sit for 3 minutes or until frothy on top. Stir in oil, yogurt and egg.

In another bowl, combine flour and salt. Add the bowl of wet ingredients to the flour mix until well combined. Continue to add flour a half cup at a time until you can no longer stir with a spoon.

At that point, put ball of dough on flour-coated countertop and knead for 3 minutes. (Or you can just put it in the kitchen aid like I did) and continue to add flour until dough is soft, but not sticky.

Cover dough and let rise until it has doubled in size. (about 45 min)

Cut dough into 8 equal pieces. (I put the dough in a round ball and then cut it like a pizza 4 times to make eight pieces.) Roll each piece of dough out like you would a pizza. Place one piece on flat dough on a lightly-sprayed skillet that is pre-heated to medium heat! (Important so you don't get too many bubbles) Let cook until brown on both sides. Remove from heat, add melted butter and any herb. Repeat for all 8 pieces of dough!
