Chicken Quinoa Salad

{This is the best Chicken salad ever!! The quinoa bulks it up so you don't eat it on bread and can serve a crowd}

2 Cups Chicken Broth
1 Cup uncooked quinoa

Put quinoa and broth in medium saucepan, bring to boil, reduce heat and let simmer for about 15 minutes, until quinoa has absorbed liquid and is tender.  fluff with fork and add:

1/2 C. golden raisins
1 T curry powder

stir, cover saucepan and set aside to cool.

in a small mixing bowl whisk together:

4 T. mayonnaise
4T olive oil
1 tsp ground ginger
juice of one lemon

set aside.

shred of cube:
 2 C. of chicken (2-3 breasts)

1/2 C. celery
1/3 C. green onions
1/2 C. slivered almonds (toasted at 350 for 5 minutes or so)
1C. red grapes, halved
2-3 T fresh parsley, finely chopped
salt and pepper

combine quinoa mixture, chicken and vegtables in a large bowl.  Drizzle in dressing, add salt and pepper to taste.  Good warm or cold
