Southwest Chicken and Barley

{Whole foods, simple, and soooo yummy and fresh.  Great summer recipe}


1 1/2 Cups uncooked pearl barley
1 can fire roasted corn (drained) or Fresh grilled corn cut off the cob
1/2 colored bell peppers
1/4 C chopped red onion
1 C cherry tomatoes, halved
2 avocados, cubed
2 grilled chicken breast, cubed
1 lime, juiced
 1 bunch of basil, chopped
salt and pepper to taste

Cook barley as directed
chop veggies
grill chicken and cube
toss it all together
add basil, lime juice and S&P
Toss gently
